Frequently Asked Questions

Does Goldkeim produce products?
#

No. Goldkeim is purely a knowledge platform. We do not produce anything ourselves; instead, we define the biological quality standard and make compliance visible through our seal.

Where can I get Goldkeim products?
#

When you see the Goldkeim logo, it’s simple. The Goldkeim cooperation partner guarantees legally binding! that it is Goldkeim—meaning not heat-stabilized, not degerminated, and not genetically modified. This applies to flour, rice, millet, oats, or buckwheat. The Goldkeim cooperation agreement is a legally binding contract. Anyone who produces or processes it must provide you with information about the origin of the grain, the cultivation method, and the processing date upon request.

Is there an online directory where I can find Goldkeim?
#

No, and there won’t be one.

Where can I get Goldkeim flour if I don’t see a logo? #

You have to ask. Even without a logo, you can find Goldkeim quality wherever grain is freshly stone-ground (organic shops, farmers, friends). Just ask and compare the answer with the content of this website. Goldkeim is something very simple! One of the best solutions is having your own mill at home. According to the WHO health definition, sharing this with friends also strengthens social well-being. Pay attention to the time of milling! The fresher, the better.

Which grains are available in Goldkeim quality?
#

  • Bread Grains: Stable almost indefinitely as whole grains: Spelt, wheat, rye, kamut, emmer, etc.
  • Oats: Naked oats are enzymatically still alive.
  • Millet: Use hulled millet for cooking & sprouting. Golden millet is usually heat-stabilized and not germinable.
  • Rice: Brown rice (cargo rice).
  • Buckwheat: Use light green buckwheat, not roasted.
  • Corn: Buy whole kernels and use the knowledge of Nixtamalization.

The word germinable is the most important distinguishing feature.

Do different grains have different effects?
#

Absolutely! “Find out for yourself” is the most honest answer. Here is the systemic relevance:

  • Naked Oats: Focus: Resilience & protection. Nerve balm through B-vitamins & magnesium.
  • Brown Millet: Focus: Structure & firmness. Silica source for connective tissue. Important: Only sprouted or freshly ground, never cook whole!
  • Buckwheat: Focus: Vascular integrity. Contains rutin and acts as a GABA turbo for nerve signal transmission.
  • Brown Rice: Focus: Centering & sleep. Maximization of GABA for inner peace.
  • Hulled Millet: Focus: Architecture of the center. High bioavailability of silica for the extracellular matrix.
  • Ancient Spelt: Focus: Biological integrity. Original protein design. (e.g., Oberkulmer Rotkorn, Ebners Rotkorn).

Important note on Grünkern! Grünkern is a historical emergency solution. Since it is kiln-dried at 120°C to 150°C, it is enzymatically dead. Therefore, Grünkern cannot be Goldkeim.

How do I sprout my Goldkeim whole grain?
#

Millet: Soak 4–6 hours, optional sprouting 12–24 hours. Rinse hot before cooking. Rice: Soak 12–24 hours, optional sprouting 1–2 days. Change water frequently. Naked Oats: Soak 6–8 hours, optional sprouting 1 day.

Quick Guide:

  1. Cover grains with plenty of water.
  2. Drain and rinse after soaking.
  3. For sprouting: Leave moist in a bowl and rinse twice daily until the small sprout tip appears.
  4. Cook as usual, but the cooking time is usually much shorter!

Why is activation (sprouting) so important? Isn’t freshly ground flour enough?
#

Freshly ground flour is a good first step, but it doesn’t solve one biological problem: oxidation. As soon as the grain is broken open, sensitive germ oils come into contact with oxygen. Through the process of activation, the grain ramps up its own protection systems to a maximum. It produces a wealth of natural antioxidants—a “biological fire department” that protects the fats. This provides a level of stability that simple grinding or industrial heat cannot achieve.

I grind at home myself; is that Goldkeim flour?
#

As long as it is non-GMO grain: Yes. You have produced Goldkeim flour. Congratulations—pass it on!
